Simply Southern Food :: Grilled or Broiled Zucchini

I have a fun new side dish that I cannot believe that I have not shared here yet!  While in Florida we visited David’s grandparents for dinner, while there they shared a yummy new side dish with us and a garden fresh zucchini!  I am sure that we will be having some form of this dish all throughout the summer!

Grilled or Broiled Zucchini

Zucchini, cut long way pretty thin

S&P to taste

Olive Oil

Cheese, I used shredded that I had on hand, I would love to try Gouda!  

1. First I sliced the zucchini and placed it on a flat pan for broil.  I heated the broiler to HI and brushed the slices of zucchini with olive oil.

2. Next, I lightly covered both sides with salt and pepper.

3. Then, I added the cheese!  I am sure you could have a lot of fun with this part…any cheese, add some fresh herbs, etc.

4. Finally, I placed the tray in the oven on a high rack.  I set my timer for 2 1/2 min. because I know when working on BROIL things can heat really fast!  After a few more minutes they were ready to eat!

I served mine on the side and everything was cooked up well, melt in your mouth good!  I cannot wait to try them on the grill!
